TBT My Chicken Fajita Rice Skillet

Chicken Fajita Rice Skillet


I again found myself in need of a quick and tasty dinner. Looking to see what I had in the pantry and fridge this is what I came up with. It actually was very good and everyone liked it. Was good the next day too for lunch. I find sometimes, actually more times than I want to admit, I find myself doing last minute quick cooking, but this will be one of my go to meals when I find myself in that spot.

Ingredients:
2 lbs chicken strips cubed ( I used fully cooked fajita chicken bought from store)
3 cups white rice
1 pkg frozen rainbow mixed vegetables ( vegetables were corn, peas, green peppers cubed and red peppers cubed)
1 cup Velveeta cheese
1 cup salsa

Directions:
Cube the chicken strips and place in a large skillet. Heat the chicken. Cook rice and vegetables as directions on their package states. While this is going on cube Velveeta cheese and place in microwave safe bowl along with the salsa. Microwave at 20 sec intervals stirring in between till cheese is beginning to melt. When chicken is heated through add the cooked rice and vegetables to the skillet. Stir and add the Velveeta cheese and salsa, you can add more cheese and salsa to your taste we had one in the house that didn't like spicy so we didn't add as much salsa as we might otherwise. Turn to low and simmer for 5 min or till heated through.
Dish up with a side salad and cornbread and you have a good meal. If you use salsa that is gluten free then you have a great gluten free meal also.
This dinner can be made by cooking your own chicken and using fresh vegetables too, but like I said I needed quick tonight. Hope you will give this a try and let me know what you think.

Crochet and Crafting Need More Time Max's Crochet Beanie Pattern

It seems like I don't have enough hours in the day to do all I want to get done. I have lacked in the craft and crocheting time lately. I have requests to fulfill from my Grandkids but right now I have no time it seems or really desire to crochet which is so not like me. I am hoping that tomorrow will be a better day and the migraine will be gone and allergies will settle down and my crocheting mojo will be back. Do you ever feel that way or is it just me? I haven't felt like reading much either so wow I really am off my game. When I do get going again I have been asked by my Grandson to make his little sister a bear afghan like I made him when he was little. He still uses it so I told him I would and he wants it to be pink. So I better get back to it soon so I don't disappoint them.

One of the things I am working on is taking some of my Dad's ties and make memorial bookmarks and bracelets for the family out of them. I am still working on patterns so when I get them done I will share them with you.

As a final thought today I am sharing my pattern for a hat I made this Christmas for my Great Nephew Max. Hope you like it. I am human and not a professional pattern writer so hopefully it is an easy to understand pattern and no mistakes. Rnd 3 dc in first dc, *2 dc in next dc, dc in next dc, rep from * to end join CH 2 (36 dc)

Rnd 4 dc in first 2 dc, *2 dc in next dc, dc in next 2 dc, rep from * to end join  CH 2
(48 dc)

Rnd 5 dc in first 3 dc,  *2 dc in next dc, dc in 3 dc, repeat from * to end join CH 2 ( 60 DC)

Rnd 6 DC in ea DC around join ch 2 (60 DC)

Rnd 7 DC in first 6 DC, *fpdc around next 6 dc, DC in next 6 DC, repeat from * around join CH 2 ( 10 DC, 10 fpdc)

Back up and ready to share

After over two year wait our google fiber is in and we are back on the Internet and not just my phone. I have been busy crocheting and making up some patterns that I hope to share later. I hope to post at least once a week but for now just doing a happy dance that I am on line again.
At Christmas I made hats for the Grand kids and a poncho for my daughter so I kept busy. Now I am working on stuffed animals for the little grand kids and some ponchos and covers for others. I will get back to posting later this week. Thanks for hanging in there with me.
